Campfire cuisine: Biscuits on a stick

I am raising two mini cavemen. They love grinding things with rocks, foraging in the berry patch, and holding a stick over the fire. If there is food on that stick, they are even happier. If that food is not a marshmallow, I am even happier.

Enter biscuits on a stick. When you take the biscuit off the stick, there is a hollow left inside, begging to be filled with any sort of sweet or savory item you can dream of. These are good for campfire breakfasts, dinners, and desserts. I have written the instructions assuming they will be made over the campfire, but you can also make the dough in a food processor or stand-up mixer. But really, do it outside, use your hands and forgive a little dirt.


2 cups all purpose flour

4 teaspoons baking powder

1/4 teaspoon baking soda

3/4 teaspoon salt

4 tablespoons butter

1 cup buttermilk (or 1/2 cup plain yogurt mixed with 1/2 cup milk)

Fillings: chocolate bars, jam, applesauce, scrambled eggs, sausage, nut butter

Mix the dry ingredients together, then use your fingers to rub the butter into the flour mixture so it resembles large crumbs. Then mix in the buttermilk and stir just until the dough comes together. The dough will be sticky, so use a bit of flour as you knead the dough 5 or 6 times. Then cook it over the fire or chill until ready to cook.

Find a long and sturdy stick, brush off loose bark or dirt or use a knife to scrape clean. Cut the dough into 8 pieces and impale a piece on the end of the stick. Squeeze the dough evenly around the end of the stick, making a 3-inch log shaped biscuit. Cook the biscuit over the coals as you would a marshmallow, turning the stick every few minutes. In 5-10 minutes it should be puffy and brown. Remove the biscuit from the stick and fill with your favorite filling. Repeat every weekend. RAHELI HARPER
